  • 1/2 cup vanilla Greek yogurt
  • 1 large ripe banana, mashed
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 1 tbsp Instant vanilla pudding mix (optional, for extra creaminess)
  • Pinch of salt

For Topping:

  • 1 banana, sliced
  • 2 tbsp crushed vanilla wafers or graham crackers
  • whipped cream (optional)
  • extra honey for drizzling

  • In a large bowl or two individual mason jars, combine oats, milk, Greek yogurt, mashed banana, honey, vanilla extract, pudding mix (if using), and salt.
  • Stir everything together until well combined. The mixture should be creamy and well-mixed.
  • Divide between two jars or containers if not already portioned. Cover and refrigerate for at least 8 hours or overnight.
  • In the morning, give the oats a quick stir. Top with sliced banana, crushed cookies, and a dollop of whipped cream if desired.
  • Drizzle with additional honey and enjoy immediately, or grab and go for a perfect portable breakfast.

Notes

Family-Friendly Tip: Let kids help mash the banana and measure ingredients the night before—they'll be so excited to eat "pie for breakfast" that they made themselves!
These overnight oats will keep in the refrigerator for up to 4 days. The texture actually improves after the first night as flavors continue to develop. For meal prep, make 4-5 jars on Sunday for the entire work week.
